For Charred Veggie Tacos

2 chayote or mirlitons cut in half with seed removed

1 eggplant, sliced in 1” slices

1 white onion cut into quarters

Olive oil

Salt

Tortillas

Estolia’s Salsa Verde

Chopped cilantro

Toasted pumpkin seeds

Lime slices

Crumbling cheese or vegan queso fresco

 

 

Directions

For Charred Veggie Tacos

STEP 1
In separate bowls toss the chayote, eggplant, and onion in oil.

STEP 2
Season chayote and eggplant with salt.

STEP 3
Do not combine vegetables.

STEP 4
Place onions in grill pan and place on grill. Onions should have a char coloring so stir frequently.

STEP 5
Add chayotes and eggplant on hottest part of grill.

STEP 6
When the veggies are blackened, and the skin starts to blister flip them over.

STEP 7
Remove veggies from grill cut into cubes or strips.

STEP 8
Add chayote and eggplant to bowl and add charred onions.

STEP 9
Mix and season with salt if needed.

STEP 10
Fill tortillas with veggie mixture.

STEP 11
Top tacos with cheese and pumpkin seeds.

STEP 12
Add heaping of Estolia’s salsa.
