Chicken Picado

For Chicken Picado

2 boneless chicken breast or 4 boneless cut into 1″ cubes

1 red bell pepper

1 yellow or orange bell pepper, sliced

1-2 serrano pepper, seeded and sliced lengthwise (substitude with jalapeno)

1/2 small white onion, sliced

1 jar of Estolia’s Clasica or Salsa Asado

1 cup of chicken stock

2-3 tbsp of oil

 

 

Directions

For Chicken Picado

STEP 1
Heat pan to medium.

STEP 2
Add a touch of oil to pan.

STEP 3
Add meat. Season with salt and pepper.

STEP 4
Sear quickly you just want color. Do not overcook chicken.

STEP 5
When browned on the remove from skillet. Set aside.

STEP 6
Add oil.

STEP 7
Add onions. Cook for 3-4 minutes.

STEP 8
Add peppers. Cook for 4 minutes.

STEP 9
Add meat back and incorporate.

STEP 10
Add salsa and stock.

STEP 11
Cover, reduce heat to low, and cook for 20 minutes to thicken tomatoey broth.

STEP 12
Serve with tortillas and salad.
