For Crispy Quesadilla

3-4 corn tortillas

½- ¾ c of shredded cheese Oaxaca,
Chihuahua, Monterery Jack or Vegan cheese

Estolia’s Salsa

Oil for frying

Toothpicks

 

 

Directions

For Crispy Quesadilla

STEP 1
Warm up tortilla over flame to soften.

STEP 2
Add 2 T of cheese to center of tortilla. Try to keep cheese away from edges so it doesn’t melt on to pan.

STEP 3
Secure with toothpicks.

STEP 4
Heat oil.

STEP 5
Add quesadillas to oil and cook until crispy.

STEP 6
Drain on paper towels.

STEP 7
Add Estolia’s salsa.

Recipe Tips

After the quesadilla is fried you can dust the outside with dry cotija or parmesan.
