Grilled Bean and Cheese Sandwich

2 bolillos or French rolls

1 c of pureed beans of choice

½ c shredded cheese Oaxaca, Chihuahua, Monterey Jack or Vegan cheese

Estolia’s Salsa

Directions

For Mexican Grilled Cheese Sandwich or Molletes

STEP 1
Cut roll in half. Sometimes bolillo are dense so you can remove some bread on both sides.

STEP 2
Add beans.

STEP 3
Add cheese.

STEP 4
Add salsa.

STEP 5
Add top pf roll.

STEP 6
Heat up a tablespoon or so of oil add sandwich and cook on medium-low.

STEP 7
Smash the sandwich with spatula.

STEP 8
Cook on both sides until golden brown.
