For Veggie Tacos

8 mushrooms, sliced

1 sweet potato, cut into small cubes

1 red peppers cut into 1″-2″ squars

1 yellow or orange cut into 1″-2″ squars

1/2 small onion, thick slices

1 can black beans

Favorite Estolia’s Salsa

Sliced avocado

2-3 tbsp of oil

 

 

Directions

For Veggie Tacos

STEP 1
Pre-heat oven to 400 degrees.

STEP 2
Take sheet pan and line with parchment paper.

STEP 3
Take cut up veggies add to sheet pan and sprinkle oil and pepper. Do not add salt now.

STEP 4
Cook for 10 minutes.

STEP 5
Mix veggies.

STEP 6
Cook 10 minutes and check for doneness. If veggies are still firm cook until desired.

STEP 7
Season with salt.

STEP 8
Warm black beans on stove set aside.

STEP 9
Warm and fill favorite tortilla/wrap with veggie mixture and top with drained black beans.

STEP 10
Garnish tacos with favorite Estolia’s salsa and avocado slices

STEP 11
Enjoy!
