For Veggie Asado

  • 1/2 package of 14-ounce package of extra firm tofu, drained, dried and ½” diced cubes. (Optional)
  • 1-8 oz sliced baby Bella or Italian mushrooms
  • 1 cup of roughly cut green beans
  • 2 peppers red, yellow, or orange sliced (your choice)
  • 1 serrano pepper, diced (optional)
  • 1 small onion sliced (preferably white onion)
  • 1/2 jar of Estolia’s Salsa Clasica or Asado
  • 1 cup of vegetable broth or water
  • 2-3 tbsp of oil

For Veggie Asado

  1. Season tofu with salt and pepper
  2. Add 1 tbsp of oil to medium-hot non-stick skillet.
  3. Add diced tofu and cook until a crust forms on all sides. Resembling fried chicken. Remove from pan. Set aside.
  4. Heat pan back to medium-hot add remaining oil.
  5. Add onions and peppers to skillet. Cook 3-4 minutes.
  6. Add mushrooms. Cook 2 minutes.
  7. Add tofu back into pan, stir.
  8. Add salsa, and broth/water.
  9. Season to taste.
  10. Cover and reduce heat.
  11. Cook for 15-20 minutes.
  12. Serve over brown rice and black beans.
  13. Garnish with avocado and additional salsa.
