For Steak Picado
1lb of beef, diced in 1″ cubes (Chuck steak, ribeye, or top sirloin)
1 red pepper, sliced
yellow or orange peppers, sliced
1 serrano or jalapeno pepper, sliced
1/2 small onion, sliced
1/2 jar of Estolia’s Salsa Asado or Clasica (or desired amount)
1 cup of beef or consumeĀ
2 tbsp of oil
For Steak Picado
STEP 1
Heat pan to medium to medium-high.
STEP 2
Add a touch of oil to pan.
STEP 3
Add meat. Sear. Season with salt and pepper.
STEP 4
When browned on the remove meat from skillet. Set aside.
STEP 5
Add oil.
STEP 6
Add onions. Cook for 3-4 minutes.
STEP 7
Add peppers. Cook for 3-4 minutes.
STEP 8
Add meat back and incorporate.
STEP 9
Add salsa and stock.
STEP 10
Cover, reduce heat to low, and cook for 20-30 minutes to thicken tomatoey broth.
STEP 11
Serve with tortillas and salad.
